2019 PETITE siRAH

This phenomenal wine was held for 34 months in neutral oak. This is the Kiss method of winemaking. In all essence, to take good fruit and try not to screw it up😉. With 34 months in neutral oak, you lose 25-30% of the volume to evaporation (the Angels’ share). This concentrates all of the flavors by approximately 160% while allowing most of the harsher tannins to settle out, leaving a smooth and fruit forward wine. This wine is reminiscent to me of strawberry short cake (Pairing Idea!), earthy with lots of dark fruit on the nose, making for a perfect reflection of Texas High Plains terroir.
